Have you ever wondered how the caffeine is removed from 'decaf' coffee?
The decaffeinating process occurs before roasting, when the coffee bean is green. The three most common ways to remove caffeine is through the use of methylene chloride, ethyl acetate or through the Swiss water method.
In the USA, ethyl acetate is considered a natural method because it is found (in very trace amounts) in the skins of some fruits. However, in most countries (including Canada) the ethyl acetate method is legally considered chemical decaffeinating.
The Swiss Water Process is the only method that is completely chemical free.
